Almond Flour Crackers

If you love Simple Mills-style crackers but want an easy homemade version made with simple, high-protein ingredients, these almond flour crackers are for you. They’re crispy, savory, gluten-free, and grain-free, with that cheesy flavor from nutritional yeast — no cheese required. Made in under 30 minutes, they’re perfect for blood sugar–balancing snack plates, dipping into hummus, or pairing with protein for a more satisfying, hormone-friendly snack.

Ingredients

  • 1/4 cup almond flour

  • 2 tablespoons ground flaxseed

  • 1/4 cup unflavoured protein powder

  • 3 tablespoons nutritional yeast

  • 1/2 teaspoon sea salt

  • 2 tablespoons avocado oil

  • 3 tablespoons water

Instructions:

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

  2. Mix dry ingredients. In a bowl, combine almond flour, ground flaxseed, protein powder, nutritional yeast, and sea salt. Stir until evenly combined.

  3. Add wet ingredients. Add avocado oil and water. Mix until a dough forms. If the dough feels too dry, add water 1 teaspoon at a time until it comes together.

  4. Roll thin. Place the dough between two sheets of parchment paper and roll it out thin and even. The thinner you roll it, the crispier your crackers will be.

  5. Slice. Remove the top layer of parchment and use a pizza cutter to slice into cracker shapes.

  6. Bake. Transfer the parchment with the dough onto your baking sheet. Bake for 15–20 minutes, or until golden and crisp around the edges.

  7. Cool completely. Let cool fully before breaking apart. They will continue to crisp up as they cool.

Tips for extra crispy crackers:

  1. Roll as thin as possible without tearing the dough.

  2. Bake a minute or two longer if you prefer extra crunch.

  3. If the center is softer than the edges, remove crispy edges first and return the center to the oven for a few more minutes.
