Apple Cinnamon French Toast
Golden French toast topped with warm cinnamon apples—this is the cozy fall breakfast you’ll actually look forward to making. Ingredients:
French toast
2 slices Ezekiel bread
1 egg
1 scoop vanilla protein powder (providing 25 g protein)
⅓ cup unsweetened almond milk, plus more if needed
½ tsp cinnamon
½ tsp vanilla extract
Pinch of salt
Butter or coconut oil, for greasing the pan
Warm cinnamon apples
½ apple, thinly sliced
1 tsp butter or coconut oil
½ tsp cinnamon
Optional: 1 tsp maple syrup
Instructions:
Prepare the bread. If frozen, warm the slices in a dry pan over low heat for approximately 1–2 minutes per side, until thawed. Let cool briefly.
Make the egg mixture. Whisk the egg, protein powder, almond milk, cinnamon, vanilla, and salt until smooth. Add a splash more almond milk if needed—it should be thin enough to soak into the bread.
Cook the French toast. Lightly grease a pan and heat over medium-low. Dip each slice briefly into the egg mixture on both sides, then cook for approximately 3–4 minutes per side, until golden and cooked through.
Cook the apples. Meanwhile, heat the butter or coconut oil in a separate pan over medium-low. Add the apples and cinnamon and cook for 4–5 minutes, stirring occasionally, until tender and lightly golden. Add a small splash of water if needed to help them soften, allowing it to cook off. Stir in the maple syrup at the end, if using.
Serve. Stack the French toast, spoon the warm apples over top, and finish with an extra dusting of cinnamon. Serve immediately to keep the edges crisp.
