Salted Maple Pumpkin Cookie Dough Bites

Soft, chewy and packed with cozy fall flavour, these Salted Maple Pumpkin Cookie Dough Bites are the perfect snack for crushing sweet cravings while still giving your body something nourishing. Made with protein, healthy fats and fibre from almond butter, hemp hearts and flaxseed, they’re designed to help keep you satisfied and support steady energy and healthy hormone function. Finished with a dark chocolate drizzle and flaky sea salt, they’re the perfect balance of sweet, salty and satisfying.

Ingredients:

  • ½ cup pumpkin purée

  • ½ cup almond butter

  • 3 scoops vanilla protein powder

  • 1 cup almond flour

  • 4½ tbsp hemp hearts

  • 2 tbsp ground flaxseed

  • 2 tbsp pure maple syrup

  • 1 tsp cinnamon

  • ½ tsp ground ginger

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • Coconut oil, for rolling

For the Sheep’s Milk Tzatziki:

  • ½ cup dark chocolate

  • 1 tsp coconut oil

  • Flaky sea salt

Instructions:

  1. Add the pumpkin purée, almond butter, vanilla protein powder, almond flour, hemp hearts, ground flaxseed, maple syrup, cinnamon, ginger, vanilla extract and sea salt to a large bowl. Mix until everything is well combined and a thick, cookie-dough-like mixture forms.

  2. Lightly coat your hands with a small amount of coconut oil to prevent sticking. Scoop out the mixture and roll it into approximately 24 bite-sized balls.

  3. Arrange the bites on a parchment-lined tray or plate and refrigerate for about 10 minutes to firm up.

  4. Meanwhile, melt the dark chocolate with 1 teaspoon of coconut oil, stirring until completely smooth.

  5. Remove the pumpkin bites from the fridge and drizzle the melted chocolate over each one. Finish with a sprinkle of flaky sea salt.

  6. Return the bites to the refrigerator until the chocolate has set. Store in an airtight container in the fridge and enjoy chilled.
