Tahini Chip Cookies
Inspired by the best tahini chip cookies I had in NYC, these are a hormone-healthy take that support your luteal phase. They're rich in protein, seed-cycling approved, and sweetened with blood-sugar-friendly yacon syrup.

Ingredients (Makes 12 cookies)
1 ½ cups almond flour
½ cup protein powder (your fave clean blend)
1 egg
3 tbsp yacon syrup (sub with honey if needed, but will increase carb content)
2 tbsp tahini
¼ cup almond milk
¼ cup ghee
1 tsp vanilla extract
½ tsp baking powder
⅛ tsp salt
½ cup dairy-free chocolate chips (I used @lilys_sweets)
1 cup sesame seeds (for rolling)
Directions:
Preheat your oven to 325°F. Line a baking sheet with parchment paper and set aside.
Add all ingredients to a large mixing bowl. Mix until well combined. Pro tip: don’t pre-melt the ghee—use your clean hands to break it down and help mix. It gives the best texture.
Chill the dough in the fridge for 10 minutes.
Roll dough into 12 even-sized balls. Then roll each one in sesame seeds.
Place each ball on the baking sheet and gently press to flatten.
Bake for 15–20 minutes, or until the edges turn golden brown.
Let cool fully. Sprinkle with flaky sea salt if desired.
Storage:
Store in an airtight container at room temp for up to 3 days, or refrigerate for a week. You can also freeze them and reheat when needed.
