Chicken Teriyaki Salad

Ingredients for the salad:
2 cups shredded curly kale, chopped
2 cups romaine, chopped
2 cups teriyaki chicken (recipe below)
½ avocado, diced
¼ cup shredded carrot
¼ cup small broccoli florets
¼ cup sliced scallions
2 tbsp coarsely chopped almonds
2 tbsp sesame seeds
2 tbsp cilantro leaves
⅓ cup Sweet + Savory Dressing (recipe below)
For the dressing:
1 tbsp toasted sesame oil
2 tbsp honey
2 tbsp coconut aminos
½ cup apple cider vinegar
1 clove garlic, minced
¼ cup nutritional yeast flakes
½ cup + 1 tbsp extra-virgin olive oil
Salt and freshly ground black pepper to taste
For the chicken:
1 tbsp minced fresh ginger
1 tbsp minced garlic
½ cup coconut aminos
¼ cup honey
2 tbsp sesame oil
2 tbsp rice vinegar
1 tsp red pepper flakes (optional for heat)
1 tbsp tapioca starch
4 chicken breasts, cubed
Instructions:
Marinate the Chicken
In a medium bowl, whisk together ginger, garlic, coconut aminos, honey, sesame oil, rice vinegar, red pepper flakes, and tapioca starch until smooth. Add chicken cubes and stir to coat. Cover and refrigerate for at least 3–6 hours (or overnight for maximum flavor).
2. Cook the Chicken
Preheat oven to 350°F (175°C). Spread marinated chicken cubes in a single layer on a parchment-lined baking sheet. Bake for 15 minutes or until cooked through (internal temperature of 165°F).
3. Make the Dressing
In a mason jar, combine all dressing ingredients. Seal tightly and shake vigorously until emulsified. Adjust seasoning with salt and pepper as needed.
4. Assemble the Salad
In a large stainless-steel bowl, combine kale, romaine, carrot, broccoli, scallions, almonds, sesame seeds, and cilantro. Add warm teriyaki chicken and drizzle with Sweet + Savory Dressing. Toss well with tongs until evenly coated.
