Chopped Kale Salad

Ingredients:

  • 2 large bunches kale (lacinato/dinosaur kale works best)

  • 1/3 cup currants

  • 1/2 cup Marcona almonds, roughly chopped

  • 1/2 cup shaved Parmesan

  • 1/3 cup extra virgin olive oil

  • Juice of 1–2 lemons (about 1/4 cup)

  • 1/2 tsp sea salt

Instructions:

  1. Remove the stems from the kale and discard them.

  2. Stack the kale leaves and chop VERY finely until the texture resembles a slaw or finely chopped grain salad.

  3. Add the chopped kale to a large bowl.

  4. Pour in the olive oil, lemon juice, and sea salt.

  5. Massage the kale with your hands for 2–3 minutes to soften the fibers and make it easier to digest.

  6. Add the currants, chopped Marcona almonds, shaved Parmesan, and optional black pepper.

  7. Toss everything together well.

  8. Let the salad sit for 10–15 minutes before serving to soften further and help reduce bloating even more.
