Easy Chicken Dinner

If you need a fast, protein-packed dinner that feels satisfying but won’t leave you heavy, this easy chicken stir fry is it. It’s loaded with lean protein, fiber-rich veggies, and tossed with spaghetti-style Miracle Noodles for a light, low-carb base. The sauce is savory, slightly sweet, and perfectly balanced — and the whole thing comes together in under 30 minutes.

Perfect for busy weeknights when you want something nourishing without overcomplicating it.

Ingredients

For the noodles:

  • 2 packs spaghetti-style Miracle Noodles, rinsed and drained

  • 2 lb chicken breast, thinly sliced

  • 1 tbsp avocado oil

  • 5 cloves garlic, minced

  • 1½ tsp fresh ginger, grated or finely chopped

  • 3 cups green cabbage, chopped

  • 2 cups shredded carrots

  • 6 green onions, sliced (plus more for garnish)

  • ½ tsp flaky sea salt

For the sauce:

  • ⅓ cup coconut aminos

  • 1½ tbsp yacon syrup

  • 1½ tbsp apple cider vinegar

  • ½ tbsp toasted sesame oil

  • ½ tsp sriracha (optional)

  • 1 tsp arrowroot starch (optional, for thickening)

To garnish:

  • Sesame seeds

  • Fresh chopped cilantro

  • Extra green onions

Instructions:

1. Prep the Noodles: Rinse Miracle Noodles thoroughly under cold water for 30–60 seconds. Drain well and set aside.

2. Make the Sauce: In a small bowl, whisk together coconut aminos, yacon syrup, apple cider vinegar, sesame oil, sriracha (if using), and arrowroot starch until smooth. Set aside.

3. Cook the Chicken:

  • Heat avocado oil in a large skillet over medium-high heat.

  • Add sliced chicken and season lightly with sea salt.

  • Cook for 5–6 minutes, stirring occasionally, until golden and cooked through.

  • Remove from the pan and set aside.

4. Sauté the Vegetables:

  • In the same skillet, add garlic and ginger. Sauté for about 30 seconds until fragrant.

  • Add cabbage, carrots, and green onions. Cover and cook for 2–3 minutes, stirring occasionally, until just tender but still vibrant.

5. Combine + Simmer:

  • Return the chicken to the pan. Pour in the sauce and stir well.

  • Let simmer for 1–2 minutes until slightly thickened and glossy.

6. Add the Noodles: Add the rinsed Miracle Noodles to the pan. Toss everything together until evenly coated and heated through.

7. Serve: Top with extra green onions, sesame seeds, and fresh cilantro if desired.
