Layered Chocolate Covered Strawberries

These layered chocolate covered strawberries are the ultimate elevated treat—sweet, creamy, rich, and surprisingly nourishing. A thick protein-yogurt layer adds structure and satiety, while a dark chocolate shell gives that classic snap we all want. Think Valentine’s Day energy meets hormone-friendly indulgence. Not an everyday snack, but a perfect context matters kind of dessert.

Ingredients

  • Strawberries
    12 large fresh strawberries, stems on

  • Protein Yogurt Coating
    ¾ cup thick Greek yogurt or skyr (2% or full-fat works best)
    ¼ cup protein powder (I used whey isolate, cookies & cream)
    ½ tsp vanilla extract (optional)

  • Chocolate Coating
    100 g dark chocolate (75–85%), chopped
    1½ tbsp protein powder
    1 tsp cacao butter
    Pinch of sea salt (optional)

Instructions:

  1. Wash strawberries and dry them extremely well. Any moisture will prevent the coating from sticking. Keep stems on for easy dipping.

  2. In a bowl, mix Greek yogurt, protein powder, and vanilla until thick and smooth.

    • If the mixture feels too thick, add a tiny splash of milk.

    • If it’s too thin, add a bit more protein powder.

  3. Dip each strawberry into the yogurt mixture, coating about ¾ of the berry. Place on a parchment-lined tray.

  4. Freeze for 10–15 minutes, until the coating is firm but not frozen solid.

  5. While strawberries chill, gently melt the dark chocolate using a double boiler or microwave in short bursts. Stir in protein powder, cacao butter, and sea salt until smooth and glossy.

  6. Dip the yogurt-coated strawberries into the chocolate, letting excess drip off.

  7. Return to parchment paper and refrigerate for 10–15 minutes, until the chocolate sets.

    Storage

    • Store in the refrigerator for up to 2 days

    • Best enjoyed within 24 hours for optimal texture

    • A Note on Yogurt Choice: Normally, Greek yogurt isn’t my everyday go-to—I typically prefer sheep’s milk or goat’s milk options, especially for little ones or anyone working through gut or hormone imbalances. For this recipe specifically, the thickness of Greek yogurt is essential so the coating actually holds. Think of this as a special Valentine’s Day-style treat, not a daily staple. Context always matters.
