Miso Salted Caramel
Sweet, salty, creamy and packed with protein, this salted miso caramel is a better-for-you take on traditional caramel that’s especially satisfying during the luteal phase, when cravings and appetite can naturally increase. Dates bring natural sweetness and carbohydrates, while protein powder helps make it more filling and satisfying. The miso adds that salty, umami flavour that makes the caramel taste extra rich, and coconut milk gives it the perfect creamy consistency. Use it as a dip for fruit, drizzle it over yogurt or oatmeal, stir it into a hot drink, or eat it straight off the spoon.
Ingredients:
1 cup pitted dates (about 12–16 dates)
¼ cup canned coconut milk, plus more as needed
1 tsp vanilla extract
1½ tbsp white miso paste
3 scoops protein powder
Instructions:
Add the pitted dates to a bowl and cover with hot water. Let them soak for about 5 minutes to soften, then drain.
Add the softened dates, coconut milk, vanilla, miso paste and protein powder to a high-speed blender or food processor.
Blend on high until completely smooth and creamy. Depending on the type of dates and protein powder you use, you may need to add a little more coconut milk to get everything blending smoothly.
Transfer to a mason jar or airtight container and allow it to cool completely before sealing and refrigerating.
