Ingredients

Base

  • 6 dates, pitted

  • 1/2 cup crushed nuts of choice (I used walnuts)

Nut Butter Layer

  • 3/4 cup almond butter

  • 1 scoop protein powder

  • 1 tbsp coconut oil

Chocolate Layer

  • 1.5 cups dark chocolate (75%+)

  • 1 scoop protein powder

  • 1 tbsp coconut oil

Garnish

  • Flaky sea salt

Instructions

1. Prep the base:
Pit the dates and press half of one date into the bottom of each muffin tin to create a solid base.

2. Make the nut butter layer:
In a small saucepan, gently heat the almond butter, protein powder, and coconut oil until smooth and fully melted. Spoon about 1 tablespoon over each date and spread evenly. Sprinkle with crushed nuts and lightly press them into the mixture.

3. Make the chocolate layer:
Using a double boiler, melt the dark chocolate, protein powder, and coconut oil until silky smooth. Pour the chocolate over the nut butter layer.

4. Finish + set:
Sprinkle with flaky sea salt and freeze until firm. Once set, pop the bites out of the muffin tin and enjoy a perfectly indulgent, luteal-phase-friendly treat!
